Paleo Crepes – #sogood

This recipe is a winner folks. I am obsessed. A ziploc bag of 7 of these beauties even made it to Kauai and survived the week. #Sogood! It’s a perfectly neutral crepe, paired easily with almond butter and banana, whipped cream and berries, or a savory option such as sausage and cheese. You could also use this for tacos or sandwich wraps. The possibilities are endless!

It is so easy to throw together with only 5 ingredients. Bonus that my kids also love these. Make a double batch and keep school mornings quick and simple. Give it a try and let me know what you think!IMG_0031IMG_0033

I have not tested these crepes with any other coconut flour other than Anthony’s Premium Organic Coconut Flour. It has tested perfectly and I would recommend it. Also available on Amazon Prime for a great price. Score!

  1. Heat a non-stick skillet on medium-high heat, add an additional 1 tsp coconut oil to pan. Using a high powered blender, such as a Vitamin or Blendtec, add the ingredients in order. Blend on medium-high speed for 20-30 seconds. Pour 1/3 cup batter onto hot pan. Pick up pan and rotate to allow batter to spread into a wide circle measuring approximately 8-10 inches in diameter. Cook 45 seconds until edges begin to brown. Flip crepe with a spatula and cook an additional 30 seconds. Repeat!
