  1. Heat a non-stick skillet on medium-high heat, add an additional 1 tsp coconut oil to pan. Using a high powered blender, such as a Vitamin or Blendtec, add the ingredients in order. Blend on medium-high speed for 20-30 seconds. Pour 1/3 cup batter onto hot pan. Pick up pan and rotate to allow batter to spread into a wide circle measuring approximately 8-10 inches in diameter. Cook 45 seconds until edges begin to brown. Flip crepe with a spatula and cook an additional 30 seconds. Repeat!
